Hi guys, thanks for your suggestions. I have recently moved to Singapore and can't find any veggie ones. If anyone might know how I could make it from the scratch, that will be most helpful. I have tried using the ingredients from a bottle without shrimp paste and it isn't quite up to the mark. Any tried and tested ways will be most appreciated. Then again, if you can buy it readily, why would one make it. How I miss HK.
Lemon grass,( kaffir) lime leaves, coriander leaves and seed, galangal ( or ginger), chillies are the basic. Add salt and pepper. Blend to form a paste. This is not always easy with a blender so I'll add some coconut milk. This has worked for me during "emergencies" whenever a paste or ready made green curry sauce is not available. Sometimes, when lime leaves are unavailable I would use lemon leaves or any citrus leaves available-- not highly recommended though as the result is under par if you know what it really SHOULD taste like.
